Masala Cutlet

Ingredients
1. 500 gms. beef or mutton minced finely ¼ cup onion chopped very finely, Salt to taste. 2. ½ tsp. coriander, ½ tsp. pepper, 3 dry chillies, 6 garlic slices, 3 cloves, 1 piece cinnamon, 1 cardamom, 1 small piece turmeric. 3. ¼ cup oil. 4. ¼ cup onion chopped very fine, 1 tsp. green chillies sliced thin, ½ tsp. ginger chopped fine. 5. ½ dsp. mint leaves chopped fine. 6. 1 tsp. vinegar

Method
Grind the ingredients of the second item very smoothly and take a little masala water. Heat oil and add ¼ cup chopped onion, green chillies and ginger. When the onion turns light brown add the masala mixed in water. Stir continuously over low heat till oil separates. Add minced meat, chopped onion and salt. Stir well to prevent lumps. As the water comes out of the meat, cover the pan and cook. Sprinkle chopped mint and vinegar. When most of the water is absorbed and it is moist remove. Knead well to remove lumps and let it cool.

To make into cutlets
1. 1 large egg.
2. Bread crumbs for coating
Mix egg yolk with the prepared mince and shape into twelve cutlets.
Coat beaten egg white and bread crumbs uniformly.
Fry in boiling oil and drain.
